Ox gallstones, also known as cow gallstones, cattle gallstones, Calculus bovis or Bezoar Bolus (牛黄,犀黄, XiHuangwan, Niu huang, Calculus bovis, Bezoard) are a pebble like deposit that forms in the gallbladder of the ox species.
The stones vary in shape and colour, ranging from large grape size spheres to pyramids and more pointed shapes. The stones are typically a dark burnt orange shade, but can be more yellow or brown.
The presence of gallstones within the animal is largely dependent on the age and diet of the cattle. The stones are most typically found in older cows, however it is not impossible for young beasts to have stones present.
Retrieval of the stones is done during the slaughtering process of the cattle, whereby the gallbladder is removed and cut open to release any stones. Meaning, most stones are collected at beef abattoirs

With high grade stones easily reaching a value of £100-200 per gram
